EDIT-Did you mean that OBJECT_BANDIT_CHICKEN_ON_STICK_01 was the wrong piece of meat, or that there is a problem making it into a weapon? If it is the wrong piece of meat try OBJECT_RED_MEAT_02.

Take the graphic/mesh id # for OBJECT_BANDIT_CHICKEN_ON_STICK_01 and put it as the graphic/mesh id # of a weapon that you don't use normally.
I did it with the iron cleaver for an example:
