Such a thing would require the editing of the plate armour mesh but yes it is possible.

It'd require reweighting the mesh to the skeleton. If you know how to do that then you've passed the first and easiest step.

If anyone did do it, they should do the non-spiked shoulder pads on both sides, it would look better than spikes on both sides.
